Description

It’s been a few vintages since we last did a dessert wine, but it’s been worth the wait. 2017 was a great year for this style of Semillon with high natural acidity leading to a refreshing, palate cleansing wine that pairs perfectly with almost any dessert.

The grapes were picked, pressed then cold settled before reverse osmosis was used to concentrate the sugar levels prior to fermentation. We use this method as it allows us to pick the fruit when ripe with only a touch of Botrytis, giving the wine a fine natural acidity that balances with the residual sugar. We allow ‘The Sticky’ to ferment a bit dryer than many dessert wines – so the wine, whilst still sweet, doesn’t coat the mouth with syrupy sugar.

Simply put, this is honeysuckle in a glass – sweet and lush, without being cloying. We’ve blended in a small parcel of barrel-aged Marsanne (5%) which gives a lovely hint of pineapple at the back of the palate.
